Recipe Carrot and Walnut Cake
I forgot this customer's name. Ufff sorry. She tasted this cake done by me from someone last week and straight away replaced order through that someone, hope none confused here.
By the way, I thought of sharing this recipe since few weeks ago, only now i have time to do so.
Ingredients
(A)
260gm cake flour
1 1/2 tsp baking powder
1 tsp soda bicarbonate
1/2 tsp salt
1 1/2 tsp cinnamon powder
4 nos eggs
300gm castor sugar
208gm vegetable oil
2 tsp vanilla essence
100gm walnut - roasted
240 - 260gm carrot
Method
Beat eggs for 2 minutes, pour in sugar and beat till half light, pour in vegetable oil and vanilla essence, beat well.

Bake 150C 30 - 35 minutes. Let it to cool then frost it
Frosting
200gm cream well
250gm cream cheese
180 icing sugar
1/2 cup whipping cream
1 tsp vanilla essence
Method
Beat cream well and cream cheese until soft then slowly add in icing sugar, beat for 10 minutes then add in vanilla essence and whipping cream, beat for 5 minutes. Ready for frosting.
