Blue Velvet Cake
2 cups sugar
230gm salted butter
1 tablespoon cocoa powder
1 tablespoon blue food coloring
2 1/2 cups cake flour
1 cup buttermilk (1 cup of fresh milk + 1 tablespoon vinegar)
1 teaspoon vanilla essence
1/2 teaspoon soda bicarbonate
1 tablespoon vinegar
250gm cream cheese
1 cup melted marshmallow
450gm icing sugar
Preheat oven to 170 celcius
In a mixing bowl, cream sugar and butter, mix until light and fluffy.
Add eggs one at a time and mix well.
Then add sugar and mix well.
Sift together flour, cocoa and baking powder
Add flour mixture to the creamy mixture alternately with buttermilk.
Blend in vanilla, vinegar and blue coloring.
Grease and flour 3 (8-inch) round pans.
Fold batter into the pans.
Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from heat and cool completely before frosting.
Blend cream cheese and butter together in a mixing bowl.
Add marshmallows and sugar and blend.
Spread between layers and on top and sides of cooled cake.
