When comes to muffin, I am very fussy of the taste, mostly I only eat 1 pc if i bake or buy from any bakery shops. This morning i went to buy some stuff for baking and started thinking of baking chocolate muffin once i reached home.
Took all ingredients and started mixing and baking it.
Immediately baked and taken it out from the oven, i cant resist myself of having a bite though its still hot, surprisingly i cant stop eating it, eat one piece after another, wow!!!! this is really my taste of muffin.
I really like the bite of walnuts, white and chocolate chips filled in the muffin.... its so yummy!!!
I would love to share the recipe with whomever loves baking, here it goes;
Buttermilk Chocolate Muffin
25gm cocoa powder
160gm self raising flour
1/4 tsp soda bicarbonate
1/4 tsp salt
200gm castor sugar
70gm vegetables oil
1 cup buttermilk (1 cup fresh milk + 1 tbsp vinegar)
1 tsp vanilla essence
25 gm walnut - roasted
25 gm white chocolate chip
25 gm chocolate chip
Place egg in a bowl, beat for 2 minutes and slowly pour in castor sugar and beat for 5 minutes with medium speed. Slow the mixer, put in the bowl buttermilk, vegetables oil and vanilla essence and beat for one minute then stop the mixer.
Sieve all dry ingredients then mix together with walnut and chocolate chips. Spoon into a papercup then bake for 15 minutes in 150C.
